Fresh fishSea bass fillet rolls on the bed of potatoes with sparkling wine sauce

Ingredients for two persons:
  • 400g sea bass fillet
  • 50g leek
  • 50g carrots
  • 50g celery root
  • 100ml sparkling wine
  • 2 egg yolks
  • 200g potatoes
  • 100g butter
  • a pinch of salt and pepper
Season the sea bass fillets with salt and pepper. Cut the vegetables into thin noodles and cook them shortly (1 minute) in boiling water, cool them immediately. Place the sea bass fillet on a cutting board. Place the prepared vegetables on the tail part of the fillet. Carefully role the fillet and tighten with cooking twine. Place the prepared rolls on a baking tray and drizzle with some olive oil. Bake the fish for 15 minutes at 200°C. Meanwhile, in a bowl placed over a pot of steaming water beat the egg yolks and sparkling wine into a foamy sauce and mix in the butter. Place the sauce and salty potatoes you enriched with butter and finely chopped parsley on a plate. Place the sea bass rolls on top.
You can also prepare other types of fish this way. In order to prevent the vegetables from burning during baking, cover it with aluminum foil. Instead of potatoes, you can use rice, millet or couscous as a side dish, making sure the side dish does not have a too intense taste so it does not dominate over the flavor of the fish. You can serve brut sparkling wine you used in the sauce with this meal.
