SmokedRisotto with smoked fish and zucchini

Ingredients for two persons:
  • Cromaris smoked sea bass or sea bream fillets 100 g
  • zucchini 150 g
  • risotto rice (carnaroli, arborio) 160 g
  • olive oil 0,5 dl
  • garlic and parsley, 20 g each
  • butter 30 g
  • fish stock 0.6 l
  • ground hard cheese 30 g
  • a pinch of salt and pepper
 
Recipe:
Stew the rice briefly in heated olive oil, add the stock, salt, pepper, sliced garlic and parsley, and cook for 10 minutes while pouring the stock over it. Just before you finish cooking, add pieces of smoked fish, butter and cheese, and mix into a creamy risotto.
 
Note:
If you love vegetables, you can add other vegetables such as peppers, aubergines etc. along with the smoked sea bass or sea bream fillets.
